Sounds simple, and it is! It's also completely delicious and addictive, and just the cool crunch you're looking for as the weather warms up.
- 1 English cucumber (these are the kind wrapped in cellophane), sliced into discs
- 8 oz. cream cheese (I used Tofutti brand)
- 2 Tbsp. diced chives
- 2 Tbsp. chopped parsley
- 1 tsp. dried dill
- Rye bread
- salt and pepper
- Let cream cheese soften, then stir in chives, parsley, and dill.
- To assemble 1 sandwich: smear cream cheese on two slices of rye bread, top one half with cucumber slices and the other half with arugula. Add salt & pepper to taste.
Yields: 5-6 sandwiches
